I've no idea why we call these space balls or should I say Grainey's space balls but they've stuck. These are my go-to if I fancy something sweet but healthy, they just take that sweet urge away. They are effectively protein balls and the recipe has evolved over time but this is the version that I make consistently now. I make a batch and put them in the freezer and take them out to go with my cup of tea. They are super easy to make, you could get the kids involved as they are messy and I'm sure they would love it.
Makes 9-10 balls
Ingredients
1 tub apple sauce (120g)
3 tbsp. vanilla protein powder
12 pitted dates, finely chopped (approx. 275g)
3 tbsp. peanut butter
1/2 cup almond meal
3 tbsp. paleo mix or trail mix, chopped
4 tbsp. desiccated coconut, 1 tbsp. for the space ball mix and the rest to roll them in
Method
Spread the desiccated coconut on a plate and set aside.
Mix all the ingredients in a large bowl. Using an ice cream scoop or a spoon, scoop out some of the mixture and then take it into your hands and roll it into a ball.
Roll the ball in the desiccated coconut and place it on a baking tray.
Repeat the same process for the remaining mixture.
Place in the fridge or freezer to harden.
