Air Fryer Satay Chicken Wings

I am a very late adopter of the old air fryer. I couldn’t see what the fuss was about and I finally jumped on the bandwagon and it’s now one of the most used appliances in my kitchen.
I made a mistake with this recipe so now you don’t have to. I added a silicone tray with some oil in the air fryer and thought it would make them nice and crispy but it had the opposite effect. Thankfully, I had another batch and just put them on the air fryer directly and they worked a treat.
I love chicken wings, and I will order them whenever I see them on the menu. I’m sure they are out there but I haven’t come across satay style wings. They are yummy. I hope you agree.
Ingredients
600g chicken wing nibbles. I prefer these as they are easy to eat but feel free to use the proper wings or even drumsticks.
100g rice flour or cornflour
1 tsp. paprika
1/2 tsp. cinnamon myrtle (optional)
1 tsp. cumin powder
½ tsp. chilli powder
Salt & pepper
Spray oil
Sauce ingredients
1 tbsp. of cooking oil
150ml of coconut cream
2 tbsp. of peanut butter
Juice of half a lemon
1 clove of garlic, minced
½ red chilli, minced
1 tbsp. of soy sauce
1 tsp. of hot honey
½ tsp. of fish sauce
Some chopped peanuts, chilli and coriander to serve.
Method
1. Grab a plate and add the rice flour, spices and some salt and pepper.
2. Coat the chicken wings in the flour mixture.
3. Spray some oil on the air fryer base and add the chicken. Spray the chicken with some oil. You may have to do them in two batches depending on how big your air fryer is. I have a chicken setting on the air-fryer, so I just choose that but if you don’t, stick them on 180 degrees for 18 minutes. Turn over mid-way through the cooking process.
4. While the chicken is cooking, start on your sauce.
5. Heat a saucepan and add the oil. Fry the chilli and the garlic for 2 minutes or so, being careful not to burn them.
6. Add in the peanut butter and the coconut cream stirring to mix the peanut through. Once combined, add the soy sauce, fish sauce, lime juice and honey. It should have thickened up, so remove from the heat. If it starts to separate, add a little water and whisk.
7. Take out your wings and serve with the garnish of peanuts, chilli and coriander. Grab a bib and enjoy.
