Limoncello, Lime & Kaffir Lime Leaves Grown-Up Slushie

This is a grown-up version of a slushie. It's super refreshing and goes down a little too well. You have to drink them really quickly here in Brisbane as they melt ;-) So easy to make.



Serves 2

Ingredients

Syrup

Juice of one lime. Keep the lime and add it to the saucepan for the syrup.

Juice of one lemon. Same as above with the flesh/skin.

100g caster sugar

400ml water

3 shots of limoncello

3 kaffir lime leaves


2 shots of limoncello


Method

  1. Add all the syrup ingredients to a saucepan and bring to a simmer for 10 minutes or so. Make sure all the sugar has dissolved.

  2. Allow the syrup to cool.

  3. Remove the leaves and lemon and lime carcasses and pour the syrup to a sealed container and place it in the freezer. Allow to freeze for a couple of hours. Get a fork and break the ice mixture up so that it's like a slush.

  4. Leave the ice in the freezer for a few more hours or overnight.

  5. Pour 1 shot of limoncello to a cocktail glass. Then gently add in the slushed ice.

  6. Serve straight away and enjoy.
