Down the Rocky Road

I can truly say that this is the best rocky road recipe ever, because it's my friend Ashleigh's recipe :-) With a little modification of course. This is so addictive, one piece won't be enough. You have been warned. It's a great little gift and is loved by children and grown up children alike. It's so simple, if you have children, get them involved.


Makes about 16 portions. They might seem a little small but they are pretty filling and hey you can always go back for second helpings.


Ingredients

1 pack mini marshmallows (150g)

1 pack of snakes (I used natural confectionary-350g), diced

1 large 360g block Cadbury's chocolate. Don't skimped on this as it really does make a difference to the quality in my opinion. Break up into squares.

150g chopped nuts

1 large Crunchie bar, diced or broken into small bits

1 tbsp. coconut butter


Method

  1. Start by placing a saucepan filled with water on a medium heat. Don't fill to the top. Place the bowl with the broken up chocolate over the top, making sure that the bowl doesn't touch the water.

  2. Grease a baking tin with the coconut oil.

  3. Place all the dry ingredients into bowl.

  4. Once the chocolate has melted, stir into the dry ingredients, making sure all the ingredients are lightly coated in chocolate. Pour into the tray and level off.

  5. Chill in the fridge until the chocolate has hardened. An hour or 2 will be fine.
